Finely chop the onion and garlic.
Carrots and celery wash and finely chop or grate.
All this is put in a bowl with a lid, add 2 tablespoons dry red wine and simmer for 3 minutes over high heat.
Add the beef and continue to simmer over high heat without closing the lid, about 3 minutes.
Add the broth and the remnants of red wine.
Tomato paste mix well with spices, add to the sauce.
Cover and cook 10 to 11 minutes on medium heat.
At the end remove the Bay leaf, season with salt and pepper.
