Ingredients for Rye bread with whole grain and seeds
- Wheat - 50 g
- Grain - 50 g
- Sunflower seeds - 2 tbsp
- Pumpkin seeds - 2 tbsp
- Flax seeds - 1 tsp.
- Sesame - 2 tbsp
- Sourdough - 350 g
- Rye flour - 240 g
- Flour - 250 g
- Salt - 15 g
- Molasses - 0.5 tbsp
- Water - 250 g
Step by step instruction of cooking Rye bread with whole grain and seeds
Here I have everything you need for a grain mixture. Wheat and rye I bought at the bird market, where we sell them directly from the bags in liter jars. If there is something one( wheat or rye), it is possible to replace one component, then take 100g.
Grain boil until tender. And other seeds( sunflower seeds, flax and sesame seeds) pour boiled water, so that slightly covered and let stand for a bit( if after soaking there will be some water not to pour out). After all connect together.
Leaven to cook(ie feed, the one that you have in the fridge) beforehand. In the photo I have of the grain mixture and the prepared yeast.

Then from the dough to form a loaf and put on oiled protiven, seam side down.
I divided the dough into 2 parts and put in bread tins. Left alone to increase in volume 2 times. It may take time from 2-5 hours. It took me somewhere around 3.5-4 hours.
Here is the dough after I have increase. At the top you can gently make cuts, but you can not do what you want.
The oven pre-heated to 250 degrees.( put down a bowl of water) And bake the bread 10 minutes at this temperature. After the temperature reduce to 200 degrees and bake approximately 50 minutes.
Ready bread immediately after baking, sprinkle with water, cover with a towel and cool on a wire rack.
