Another delicious opportunity to use rhubarb. Recipe found in the Estonian culinary blog "Nami Nami".
Ingredients for Rhubarb muffins
- Chicken egg - 2 PCs
- Sugar - 150 g
- Flour - 250 g
- Leavening agent - 1 tsp.
- Vanilla sugar - 2 tsp.
- Cinnamon - 1 tsp.
- Sour cream - 150 g
- Butter - 50 g
- Rhubarb - 400 g
Step by step instruction of cooking Rhubarb muffins

Whisk the eggs with the sugar.

Add remaining ingredients, except rhubarb, and stir until a homogeneous dough.

Add pre-prepared (thinly sliced) rhubarb and again mix everything thoroughly.

Oil-lubricated molds for baking muffins and fill them with batter to the edges.

Bake in preheated oven (220 degrees C) for 15 minutes.
