Many people like smoked fish. But not everyone likes to buy store-bought vacuum-Packed. Much better if You will buy fresh or frozen fish, and cook it yourself.
Ingredients for Smoked pelengas
- Pelengas - 1.5 kg
- Water - 1.5 l
- Black tea - 4 tbsp
- Onion - 1 piece
- Cognac - 2 tbsp
- Salt - 4 tbsp
- Sugar - 1 tbsp
- Liquid smoke - 150 ml
- Olive oil - 20 ml
Step by step instruction of cooking Smoked pelengas
Fished on the market! Fish cleaned, washed, gills removed.
Make a cut from the top, through the cut remove the backbone and entrails. Wash. Make the incisions.
Prepare the marinade. In cold water, put the onion, not cleaned, tea, sugar, salt. Bring to a boil, let cool. Add the brandy and liquid smoke. Put to marinate the fish for 30 minutes.
Baking pan cover with foil to avoid a mess. Fish grease both sides with oil and spread on bars. Put into the oven. Temperature 170 degrees for one hour.
