Easy, delicious salad in about 15 minutes.

For 3 hours before the meal to put the zucchini in ice water and refrigerate.
Prepare the salad: zucchini, cut into very thin kruglyashi (better grated),
on the same grater, cut onion into thin rings, add to zucchini
tomatoes cut into slices, and olives in halves, add to the salad
Prepare the dressing: olive oil (think you can with a vegetable), lemon juice, salt, white pepper, mint and rosemary needles put in blender and whisk everything well.
Pour the salad and gently stir.
Mozzarella cut into cubes, sprinkle with salad on top.
Allow to stand for 5 minutes and serve.
