Very simple and quick to prepare sauce. Minimum ingredients, minimum time and cost. And it turns out very tasty!

I cooked the sauce in the roaster (of course will fit the saucepan with high sides and any other similar utensils).
In a roaster, pour a little olive oil, put on a small fire. Finely chop the garlic cloves and throw into the hot oil. Clean blue, cut into cubes, add to garlic, stir, cover with a lid. To do the same with courgette. Stew a few minutes, the vegetables and add water (so to get the soup). Pour the mixture of dried vegetables (this can be any mixture, I had a mixture of carrots, onions, and various roots).
Peel the potatoes, wash and cut into strips, add to vegetables. Salt, add spices, mix well. Simmer until potatoes are done.
It is desirable to bring to the table slightly chilled (not scalding hot). Bon appetit!
