- Champagne - 75 ml
- Lemon juice - 60 ml
- Sugar - 185 g
- Chicken egg - 3 PCs
- Cream - 120 g
- Gelatin - 3 PCs
- Raspberry - 300 g
Step by step instruction of cooking Dessert "Air Berlin"
First soak the gelatine
Mix champagne, lemon juice, egg yolks and 60 grams of sugar.
While stirring bring to a boil.
Add the gelatine and pass all through a sieve, to avoid lumps.
Whisk whites with 25 g of sugar and gently combine all.
Allow to cool a little.
Whisk the cream and add to egg mixture.
