A quick but VERY delicious snack and hot and cold!!! I think that many will agree with me. Try it!!!

Wash tomatoes, scald, remove the skins and cut into slices.
Grate cheese on a fine grater.
To make the batter: the cheese add eggs, mayonnaise, flour ( the original recipe was not flour)
Season with salt and pepper to taste and mix well. The consistency should be thick.
Tomatoes dipped in batter, spoon into the pan heated with vegetable oil.
Fry on both sides until Golden brown.
Spread on paper towel to drain excess fluid.
When serving, garnish with parsley.
