Eggplant cut into cubes.Add salt and leave for some time.

In a Cup of eggplant pour cold water.Stir the eggplant. A good squeeze.

Pressed eggplant to add into the cauldron. Add spices: salt 1-1,5 tsp,red and black pepper 0.5 tsp. mix well.To reduce the fire and simmer the vegetables for 10-15 minutes with the lid closed.

5 minutes until cooked add the chopped greens(I dill, cilantro, Basil, parsley),garlic and 1tbsp.l. soy sauce.
