Delicious and healthy combination of vegetables and meat. And piquancy to this dish add some aubergines. In season, eggplant is one of my favorite dishes.

Cut the meat into portions. In a pot heat vegetable oil and fry the meat.
To the meat add arbitrarily chopped carrots and onions. Add a little water and stew meat.
While the stew meat, we prepare the vegetables.
Peel the potato and cut circles.
Tomatoes, eggplants and bell peppers also cut into circles.
My greens and cut into not very small.
In the cauldron where the stew, we layers spread all the vegetables. First potatoes, then tomatoes, peppers and a final layer of eggplant. Pour a little water (so the vegetables were covered), cover with a lid and stew until ready on low heat.
When the vegetables are ready, turn off the heat and sprinkle with herbs.
