Onion marmalade

Recipe honestly took from the book Nina Belotserkovsky "recaptcha". Strongly suggest to all fans of archery! For my taste this is a perfect side dish to meat dishes. The author suggests to serve with a cheese plate and wine.
Ingredients for Onion marmalade
- Red onion - 1 kg
- Olive oil - 50 g
- Semi-sweet red wine - 100 g
- Sugar - 75 g
- Honey - 50 g
- Vinegar - 4 tbsp
- Coriander - 1 tsp.
- Spices
Step by step instruction of cooking Onion marmalade

The products required.

Cut the onion into half rings, not chopped.

Warm up olive oil and add the coriander and thyme. Stirring constantly, bring until a slight haze and add onions. Fry on medium heat for 5 minutes. Do not allow to burn! Reduce the heat, cover and simmer for 15 minutes (stirring occasionally).

Add the wine, honey, sugar, vinegar, salt, pepper and simmer 40 minutes, stirring periodically.
