The aubergine caviar marinated

Very tasty eggs, do not require frying. Good as salad, and as a billet for the winter. Recipe shared (in secret) my cousin and I "secret world" :-)
Ingredients for The aubergine caviar marinated
- Eggplant - 2 kg
- Sweet pepper - 0.5 kg
- Onion - 3 PCs
- Carrots - 3 PCs
- Garlic - 6-8 tooth.
- Black pepper - 1 tsp.
- Parsley - 1 Puig.
- Sunflower oil - 200 ml
- Sugar - 4 tbsp
- Salt - 1 tsp.
- Vinegar - 150 ml
Step by step instruction of cooking The aubergine caviar marinated
Prepare the vegetables.
Eggplant peel (this is optional) and cut into small cubes.
Peppers and onions also cut into cubes and carrots RUB on a coarse grater.
Now for the marinade.
Mix the oil, pepper, salt, sugar and vinegar. Add chopped parsley and garlic.
Put all the vegetables in the marinade and stir.
Now spread the eggs in sterile bottles 0.5 l, cover, put in a pot of water (approximately the middle banks) and sterilize them for 10-15min. After that roll up.
Exit 6 cans of 0.5 liters.
