- Pork - 500-600 g
- Bread crumbs - 2 tbsp
- Vegetable oil
- Lemon peel - 1 tbsp
- Chicken egg - 1 piece
Step by step instruction of cooking Medallions of pork a crunchy "cap"
Pork fillet cut into thick slices and tie with cooking or ordinary thread, folded in several layers, giving the medallions round shape.
Fry in ghee (vegetable, olive) oil for 3 minutes on both sides, season with salt and pepper and put in ovenproof form
Mix the breadcrumbs, egg and zest of lemon (I had lime),
add a few sprigs of chopped fresh parsley
Put the mix on the medallions and bake in the oven at functions "grill" or on high for 5-8 minutes (until it will turn brown "cap")
Serve with vegetables and garnish will suit boiled pasta, mashed potatoes or steamed vegetables.
