Ingredients for Souffle of liver and pear
- Beef liver - 500 g
- Pear - 500 g
- Cream - 150 ml
- Salt
- Black pepper
- Nutmeg
- Cognac - 50 g
- Butter
- Yolk egg - 4-5 PCs
Step by step instruction of cooking Souffle of liver and pear

Liver clear from the films, cut into small pieces.
Pears peel, remove seeds, cut into pieces.

With a blender whisk the liver, pears, egg yolks, cream, salt, pepper and nutmeg (you can add brandy).
Form a well greased with butter, pour the obtained liver mixture into the mold and put in a preheated 200 degree oven for 40-50 minutes (the middle should not be soggy - check with a toothpick).

Obtained souffle cut into pieces.
There can be warm and cool.
