Maybe this soup at first glance seem complicated. But if You'll follow my instructions, this soup is on Your table more often.
Ingredients for Mageritsa
- Offal - 500 g
- Intestine - 300 g
- Vinegar - 100 g
- A bouillon cube - 1 piece
- Olive oil - 200 g
- Lettuce - 1 Puig.
- Green onions - 7 PCs
- Parsley - 1 Puig.
- Figure - 120 g
- Black pepper
- Chicken egg - 3 PCs
- Lemon - 2 PCs
Step by step instruction of cooking Mageritsa
Wash the inside with cold water. Cover with water, bring to boil, cook 5 min. Drain the water, pour 3 litres of new water, boil 10 minutes , skimming. Drain the broth, put the chicken cube and leave.
Cut into small pieces.

At the end of the tube You will see a twisted intestine. Remove it to the end. The same is done with all the guts. A good wash.
To fill intestine with vinegar, leave for 15 min.
In a large pot with Oli. oil, fry lightly the finely chopped onion.
Add the entrails, guts, parsley, dill, spices and 2 scoop of broth.
Add the chopped lettuce and pour the remaining broth. If You like thin soup, pour 3 liters, we love thick, I add 2 quarts. Cover with a tight lid and on medium heat, simmer 30 min.
When it came time to add the rice. And simmer, with the lid closed 15 minutes. During this time, prepare the sauce. Venchikom, lightly beat the eggs in a thin stream to mix with the juice from the lemons. Intensive continuing to whisk, slowly pour 2 scoop of broth from the finished soup.
Remove the pan from the heat and quickly pour in the sauce. Stir and the soup is ready.
