I want to present you simple bright summer dish. A storehouse of vitamins. Ideal for people weight watchers (excluding potatoes). Can be served as a separate dish or garnish. Is prepared simply, eaten quickly.

Cut the potatoes into quarters and fry in vegetable oil (until tender).
Cut eggplant and zucchini.
Add to the potatoes after 15 minutes. Fry until Golden brown (about 10 minutes). Salt.
Cut into medium-sized pieces of pepper and Apple.
Spread in foil potatoes with eggplant and zucchini, add the Apple, pepper, tomato (finely cut it I do not advise), parsley. Do not stir. Water is also not necessary to add. Juice from vegetables will be sufficient. And so all 4 servings.
