Very fragrant soup with mushrooms and smoked pork shank. Don't forget sour cream!

For our flavored soup we will need: 300 grams of delicious beef shank, white mushrooms (I had dried), potatoes, a couple of pieces, onion - bulb and green. More sour cream and flour (not pictured). Here is a delicious set.
Delicious juicy cut plastic shank. In principle you can take any smoked meat, even chicken. Just not sausage.
Now mushrooms. I have dried porcini - soak for 30 minutes. Here, such beauty turned out. If the mushrooms are frozen, it is best to defrost them and fry lightly in a skillet with butter. Fresh mushrooms cut into thin slices.
Put a pot of water (I liter) on the stove. And meanwhile, chop the potatoes in cubes.
Smoked meat cut Salko and cut it smaller. If no fat on the meat, you can use vegetable oil.
Put lard in a pan and vytaplivaete, stirring occasionally.
Cut into cubes onion.
Fry the onion in the bacon fat.
The rest of the meat cut into cubes slightly larger.
The water is boiling, throw our potatoes. Cook for 10 minutes.
Meanwhile, fry the onion until Golden brown.
To the onions add the meat and fry a little.
To the potatoes add the mushrooms, and cook for another 10 minutes. Salt.
In addition we will make a filling soup. In principle, it is optional. But it is the soup tastier. To do this, pour half a Cup of broth from pan and cool. To a dry pan add 1 tablespoon of flour (no more) and fry on a medium heat. A little stir, so as not burnt.
Fried flour dilute with cold (not hot) broth and thoroughly stir to make such a sauce.
In a pot add our sauteed with onions meat and filling. Add to taste black pepper and Bay leaf. Cook for another 5-8 minutes.
