Ingredients for Beetroot and Apple soup
- Cucumber - 1 piece
- Lemon - 1/2 PCs
- Apple juice - 600 ml
- Yogurt - 200 g
- Beets - 350 g
- Salt - to taste
- Mint - to taste
Step by step instruction of cooking Beetroot and Apple soup
Combine grated beets with lemon juice in a food processor or grind in a blender. Add half Apple juice and yogurt.
Beat until smooth and dilute the remaining Apple juice, season with salt and pepper.
Grate the cucumber, mix with the remaining yogurt and mint.
