Cucumbers just attack! Salads are boring... I Present to you the recipe of caviar from cucumbers. It is not only a delicious snack but also a great way of "recycling" of cucumbers.

The vegetables that we need for caviar.
Cucumbers cut into small pieces (you can use overgrown cucumbers to clean them and remove the seeds).
Simmer in sunflower oil in this order: first the cucumbers.
Onion, pepper, garlic cut into small pieces,
carrots grate on a grater.
Tomatoes to RUB on a small grater.
Cucumbers when they let the juice out and it is half evaporated, add the onions, carrots, peppers. Simmer on medium heat (I cover are not covered) until the vegetables are soft and the liquid almost evaporated.
Then add the tomatoes, garlic (you can add a piece of grated ginger, curry powder and mustard seeds - to be in the style of Indian chutneys).
Add salt and pepper at any stage.
All this stew over medium heat until until the liquid evaporates.
Caviar is delicious simply spread on bread or use as a main dish with any white side dish (rice, potatoes, pasta).
