Tortilla zucchini

Zucchini season is in full swing. I offer you very easy and delicious dish - tortilla (TORTILLA) zucchini (I eat it for Breakfast, lunch and dinner). In most Spanish-speaking countries a tortilla is any omelet with vegetables, served hot or cold, sometimes as a snack bar.

Step 1

Here are the vegetables that we need.

Step 2

Finely chop the onion and fry in butter until Golden brown.

Step 3

RUB the zucchini on a coarse grater.

Step 4

Add half of the grated zucchini (squeeze the juice) to the onions and fry on the heat for 2-3 minutes.

Step 5

Beat the eggs with half (raw) grated zucchini.

Step 6

Add the fried mixture of zucchini, onion, salt and pepper, mix thoroughly and pour into hot pan with oil.

Step 7

Spread on top, for example, chopped tomato, reduce the heat, cover and leave on the fire until cooked.
Can be baked in the oven or slow cooker.

Step 8

You can put the peeled shrimp, chicken or just pieces of sausage.
