Lemon well washed and scalded with boiling water. Remove the lemon zest (grated).
Lemon zest combine with sugar. In the sifted flour, add baking powder, oregano and a pinch of salt. Pull it all together.
Cold butter cut into small cubes, quickly grind with spicy flour mixture until fine crumbs. Add cream and milk and knead elastic dough.
If needed, add in the pastry flour, but not "hammer" it. Here is a beautiful elastic dough is obtained.
Board sprinkled with flour. The dough can be rolled out on a Board and cut out circles, but I prefer this forming biscuits: flatten the dough into a fat sausage, cut into medallions and shape the cookies like pancakes.
Preheat the oven to 200*C. Put the cookies on baking paper and bake for approx. 15 min., until a characteristic brownish tint.
Ready cookies to cool on a wire rack.
Cheese (fat - each) add 2 tbsp sugar or sweetener, juice 0.5 lemon, sachet of vanilla sugar and 1-2 tsp of lemon zest.
To prepare the berries. (Honestly, it was the only recipe for blueberries/blueberries, but I took a chance to still make the assortment of sour-sweet-neutral berries and the taste was just more interesting)
Fresh berries wash and dry (frozen pre - thaw) and sprinkle lightly with sugar.
On the cooled cupcakes put the cottage cheese and decorate with berries. It is advisable to put in the fridge for 30-60 min., but you can just enjoy!
