Fowl-Midas Egyptian dish of beans, is eaten as a hot dish. Fascinated me with their interesting flavour. Could substitute for mashed potatoes. Will be indispensable during lent.
Ingredients for Fowl-Midas
- Beans - 250 g
- Lentils - 4 tbsp
- Lemon juice - 2 tbsp
- Olive oil - 6 tbsp.
- Salt - 1/2 tsp.
Step by step instruction of cooking Fowl-Midas
Beans with lentils, rinse and soak overnight in cold water.
In the same water bring to boil and simmer with lid ajar cook an hour and a half to complete softness.
In the process of cooking the water should completely evaporate.
In a bowl, mix 6 tbsp olive oil 2 tbsp lemon juice and 1/2 tsp salt.
Add the beans with lentils, mix with butter and with a fork mash until the beans fully absorb the sauce.
Rings slice olives and finely chopped parsley.
