Boil the rice with a pinch of salt. Allow to cool and grind into a puree.

Yolks, milk, cream, flavoring, lemon zest, flour and powdered sugar mix. The cooled rice puree mixed with our dough.
Whites, remove from refrigerator and beat in a solid foam. Put in the dough, mix.
Melt the butter and pour in the batter, then quickly mix everything. Leave for 8-10 minutes.
Heat the pan (as needed lightly grease with vegetable oil) and bake pancakes.
