My nine year old daughter is very fond of Turkish cuisine. Recently arrived from Turkey, so not much missed her, and prepared this dish. Great as a side dish (especially the fish), and as a separate dish for vegetarians and fasting people. BULGUR (processed wheat) - cereal with a predominance of YANG energy, and therefore helping to lose weight.

Cup bulgur (I had large) pour boiling water so that the top remained water on your finger. Leave to swell for at least 30 min.
Leeks cut into rings, if simple cubes, slice the carrots (you can RUB on a large grater), fry in butter.
To the onions and the carrots, add tomatoes, pre (optional) to clear them from the skin,
Add half of the garlic (sliced or crushed).
Spread the swollen bulgur, add the spices, salt to taste (I never add salt), stir, cover and simmer for 10-15 minutes, stopping a couple of times, so all the ingredients are "friends". Approximately for 5-7 minutes before turning off add the rest of garlic and chopped parsley.
Serve as separate dish or as a side dish (perfect to fish). My husband ate cold, said is also very tasty.
