Cut the onions and within 10 minutes, fry in a pan in vegetable oil, then transfer to a bowl.

Cut pork meat into large chunks. Add a little vegetable oil in a pan and fry the meat until light brown. Put in a separate bowl.

While fried meat, you can make your own mixture of Garam masala. Prepare the spices (approximately equal number), in a mortar mash the cumin, coriander, peas, cardamom and cloves, add cinnamon and Bay leaf broken into small pieces. If spices are not beans, but not ground, do not worry, use them. If some spice is no need to do without them.


Chop the garlic, grate the ginger.

Fry the pounded spices mixture in the pan, stirring, for 2-3 minutes, add wine vinegar, garlic, grated ginger, sugar and remaining spices (turmeric, nutmeg, coriander and paprika). Fry for another 2-3 minutes.

Add to the pan the meat, 1 Cup of water, add salt, cover, bring to the boil and leave to stew on low heat for 45 minutes.

Add meat to the fried onions and continue to simmer for 15-30 minutes.
