Love to spoil my family, relatives, colleagues-made pastry. And, as You may have noticed, I collect recipes of preparation of sweet rolls. The idea of such a roll I took a Chinese cooking website. Never ceases to amaze their imagination, especially in baking!
Ingredients for Roll "Orange"
- Orange - 2 PCs
- Brown sugar - 270 g
- Chicken egg - 4 PCs
- Milk - 100 ml
- Butter - 50 g
- Flour - 1/2 stack.
- Sour cream - 300 ml
Step by step instruction of cooking Roll "Orange"
In advance, better in the evening, recline sour cream on the gauze, folded in several layers, to remove excess liquid. Leave the cream "drain" for the night. You should get a thick cream.
My oranges, one cut into thin slices.
In a small saucepan give boil the water (about 300-350 ml), adding 50 g of brown sugar, allow sugar to dissolve. In saucepan, dip slices of orange and cook them 10-12 minutes.
Get the orange slices and place on a paper towel to remove excess liquid.
Coat the baking pan with parchment, grease with vegetable oil. Orange slices, put on parchment.
Make the dough for rolls. Proteins separated from the yolks. Whisk the egg yolks into foam, add the warm milk and softened butter. Again whisk.
Add the sifted flour and mix thoroughly.
In proteins add a few drops of vinegar, whisk in the stable foam, then gradually add 150 g brown sugar, still whisking.
To the yolk mass add 1/3 of whipped proteins, gently stir with a spatula.
Add the remaining proteins and gently stir again.

And put bake in oven preheated to 180 degrees, about 18-20 minutes. Will not overdo!
The baked dough gently turn over on the towel, remove the parchment, then put the parchment.
Overturn the dough on a towel the other side. With a towel rolled in a roll.
While roll cools, prepare the cream. Preparing it is very simple: add to the sour cream brown sugar
And whisk well.
Second orange peel, cloves grind. When loaf is completely cool, gently unfold it, remove the parchment, grease cream, sprinkle with orange slices and turn again. Remove the roulade in the fridge for about an hour. Crushed the orange in the filling and not add, as the roll and so will have a rich orange flavor to it at Your discretion. Roll ready!
