Recipe from the new book Julia Vysotskaya "Buns for Lelik" Homemade recipes. Can't pass up cheesecake baking. A small addition about what cheese to use for cheesecake. I usually take 5%-9%. Most importantly, as you like.

Lemon zest RUB on a small grater, squeeze the juice out of it (we will need only 2 tablespoons of juice). When rubbed the zest, be careful not to grab the white part, it is bitter.

Butter, remove from refrigerator a couple of hours and hold at room temperature so that it becomes completely soft. 175 grams butter, softened beat on highest speed, gradually adding sugar, vanilla, zest and lemon juice (2 tablespoons), to get a smooth paste.

Not stopping to whisk, one by one add the eggs (each time very carefully whisking).

Reduce speed and in small portions to enter the curd and semolina.

Mix thoroughly to avoid lumps.

Brush with remaining butter a baking pan (ø 22 cm with high sides), put in her cottage cheese and smooth.

Bake in a preheated 180 degree oven for about an hour. The crust should be Golden brown. The finished cheesecake to cool, sprinkle with powdered sugar.
