Carrot casserole with wild rice

This casserole is called in Finnish Porkkanalaatikko. The original recipe comes from the cookbook World Vegetarian Classics (world vegetarian classics) Celia Brooks brown. The base for this casserole consists of cooked wild rice, grated carrots and eggs spiced with honey and nutmeg.

- Carrots - 1 piece
- Wild rice - 0,5 stack.
- Milk - 0,5 stack.
- Honey - 1 tbsp
- Nutmeg - 1 tsp.
- Butter - 1 tbsp
- Cheese curd - 150 g
Step by step instruction of cooking Carrot casserole with wild rice
Bring the water to a boil in a saucepan, add the rice and simmer for 20 minutes. Add milk and cook the rice for another 10-15 minutes until cooked. The liquid does not drain.
Large peel the carrots and grate them on a grater.
Mix the grated carrot with the rice, then add the honey.
Season with nutmeg.
Then add the egg. Mix.
In the form greased with butter put the mixture.
Cover with foil and bake in preheated oven for just under an hour.
Serve with a couple spoons of cream cheese.
