- Chicken - 1 piece
- Onion - 2 PCs
- Butter - 20 g
- Flour - 100 g
- Yolk egg - 5 PCs
- Vinegar - 5 tbsp
Step by step instruction of cooking Chikhirtma chicken
Chicken clean, wash and boil.
When the chicken is ready, remove it from the broth.
Cut into pieces of desired size and sprinkle with salt.
Sieve the broth through a sieve or cheesecloth.
Finely chop the onions. Heat a pan and cook the chopped onion in butter.
Add the flour and mix thoroughly.
Dissolve the resulting mass in a broth. Broth put on a small fire, stirring constantly with a wooden spoon. Simmer until then, until the smell of flour.
Separately whisk the egg yolks, add the vinegar and a little broth.
After removing the broth from the heat and gradually stir in egg mass, stirring constantly, until, until the liquid becomes homogeneous. Add salt to taste.
When serving in a bowl put 2-3 pieces of boiled chicken, fill them with broth and sprinkle with cilantro. Bon appetit!
