This is my first experience of cooking paella. Recipe borrowed from Spanish chef Jose Andres. The result is unsurpassed and is worth it to prepare this flavorful and delicious dish! Add the rice to the pan and cook, stirring, 2 minutes.

Add tomato paste, paprika, chopped garlic and a pinch of saffron. Cook, stirring, about 1 minute, until the rice is browned.

Add broth or water and bring to a boil. Cook about 10 minutes, until the rice has absorbed half the liquid.

Then reduce the heat to low and cook about 8 minutes, until the rice is tender and liquid is absorbed completely.

Then on top of rice put the squid and shrimp, cover and cook on low heat for about 2 minutes.
Ready paella served in the pan.
