Sunny, warm, bright, fragrant quince jam will cheer up in a gloomy cold evening. In this recipe I combined the recipe for quince jam from a very old cookbook and my favorite recipe of jam from the apples. And, in my opinion, he was justified. By the way, till the quince is much nicer than apples - fingers does not corrode with acid. So, add to the jam the remaining acid in the lemon juice. Quince contains a lot of pectin, which has generously properties. But different varieties contain different amount of it. Therefore, under equal conditions, the syrup can thicken differently. That is, there could be a syrup, and can almost jam. But will be tasty anyway!
