Take any fish of the salmon species. We have the cheapest (budget) salmon. The fish itself is dry, but that sauce is amazing.
Cut the fish into fillets, remove the bones (I leave the skin), cut into pieces about 2 cm.

I have small mushrooms, cut in half.
