- Shrimp - 1 kg

- Tomato - 2 PCs
- Coconut milk - 400 ml
- Saffron - 1/4 tsp
- Olive oil
- Peppers red hot chilli - 1 piece
Step by step instruction of cooking Shrimp in coconut milk in Mozambique
Serve in a dish with white boiled crumbly rice. Decorate with coriander.
The dish is served hot or warm or cold, as an appetizer. Cold perfectly with toasted white bread.
In hot olive oil fry until Golden brown sliced onion half rings.
Add the tomatoes finely diced or pureed in blender, simmer about 10-15 minutes. The tomatoes will get too soft and the consistency will resemble a thick tomato sauce.
Add shrimp, simmer another 10 min.
Salt, add the coconut milk with pre-dissolved saffron and chopped hot Chile pepper.
Simmer for another 15 min.
